Grilled Chicken Breast with Roasted Sweet Potatoes and Asparagus

Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium-sized sweet potatoes, peeled and cut into small cubes

- 1 teaspoon of smoked paprika
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
Instructions
To prepare the chicken:
- Preheat your grill to medium-high heat or if you don't have grill preheat your oven to 400°F.
- In a small bowl, mix together 1 tablespoon of olive oil with smoked paprika, dried rosemary, salt, and pepper to form a paste.
- Brush the chicken breasts with the spice paste, making sure to coat each piece evenly.
- Place the chicken on the grill or in the oven (oven instructions below) and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F.
- Once cooked, let the chicken rest for a few minutes before slicing.
If you're not using grill:
- Place the chicken on a baking sheet and place it in the oven for 20-25 minutes or until cooked through.
To prepare the sweet potatoes and asparagus:
- Preheat your oven to 400°F.
- On a separate baking sheet, toss together the sweet potato cubes and asparagus with 1 tablespoon of olive oil, salt, and pepper.
- Roast the vegetables for about 20-25 minutes or until tender and caramelized.
To serve:
- Plate the chicken and divide the sweet potatoes and roasted asparagus alongside it.
- Garnish with additional herbs like parsley, if desired.
