Grilled Ribeye Steaks with Garlic Mashed Potatoes

Ribeye steaks are one of the most flavorful cuts of meat, and grilling them enhances that natural goodness. Pairing them with creamy, garlicky mashed potatoes makes for a comforting and hearty meal!
Ingredients
For the Ribeye Steaks:
- 2 ribeye steaks (about 1 inch thick)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- Salt and pepper, to taste
- Optional: Fresh rosemary or thyme for seasoning
For the Garlic Mashed Potatoes:
- 2 large russet potatoes, peeled and cut into chunks
- 2-3 cloves of garlic (adjust for your love of garlic), minced
- 1/2 cup of heavy cream or milk (or a mix)
- 1/4 cup of unsalted butter
- Salt and pepper, to taste
- Fresh chives or parsley, chopped (for garnish)
Instructions
For the Garlic Mashed Potatoes:
- Place the cut potatoes in a pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.
- During the last few minutes of cooking, add the minced garlic to the pot.
- Drain the potatoes and garlic and return them to the pot.
- Add the heavy cream (or milk) and butter. Mash until smooth and creamy. Season with salt and pepper to taste.
- Keep warm until the steaks are ready.
For the Grilled Ribeye Steaks:
- Preheat your grill (or grill pan) over medium-high heat.
- Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, minced garlic, and season generously with salt and pepper. If you have fresh herbs, feel free to sprinkle them on as well.
- Once the grill is hot, place the steaks on it. Cook for about 4-5 minutes on one side (for medium-rare), then flip and cook for another 3-4 minutes on the other side. Adjust the cooking time based on your preferred doneness.
- Remove the steaks from the grill and let them rest for 5-10 minutes before slicing. This helps retain the juices.
To Serve:
- Plate your grilled ribeye steaks alongside a generous scoop of garlic mashed potatoes.
- Garnish the potatoes with chopped chives or parsley for a pop of color.
