Hearty Bean and Vegetable Soup Simplified

Ingredients
- 1 can pinto beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 4 cups chicken broth (or vegetable broth)
- 1 can corn (drained)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: 1 cup of your preferred mixed vegetables (like carrots or green beans)
Instructions
- In a large pot, heat a splash of oil over medium heat.
- Add the chopped onion and minced garlic. Sauté for about 3-5 minutes until the onion is translucent.
- Stir in the mixed vegetables (if using) and cook for an additional 3 minutes.
- Add the pinto beans, black beans, corn, and chicken broth. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Simmer for about 15-20 minutes, stirring occasionally.
