Hearty Beef and Veggie Bake

This hearty bake is a wonderful way to use your minced beef base and pack in those nutritious veggies. It's comfort food at its finest, perfect for a cozy dinner!
Ingredients
- 1 cup vegetable-infused minced beef base (from your ingredients)
- 1 cup frozen peas
- 1 cup frozen cauliflower florets
- 1 cup frozen sweet potato chunks
- 1 cup frozen mixed peppers
- 1 tin (400g) chopped tomatoes
- 1 cup ricotta cheese
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- Olive oil for drizzling
- 2 cups red lentil pasta (or your choice of pasta)
Instructions
- Preheat your oven to 180°C (350°F).
- Cook the red lentil pasta according to package instructions until al dente. Drain and set aside.
- In a large oven-safe skillet or baking dish, combine the vegetable-infused minced beef base, frozen peas, cauliflower, sweet potato, mixed peppers, and chopped tomatoes. Mix well.
- Stir in the Worcestershire sauce, soy sauce, and season with salt and pepper to taste.
- Gently fold in the cooked pasta into the veggie and beef mixture until well combined.
- Spread the ricotta cheese evenly on top of the pasta mixture. Drizzle with olive oil for extra flavor.
- Bake in the preheated oven for about 25-30 minutes, or until heated through and the top is slightly golden.
- Let it cool for a few minutes before serving. Enjoy!
