Hearty Herby Lentil and Vegetable Soup

This comforting soup is perfect for a chilly day, packed with nutritious veggies and protein-rich lentils. It’s also a great way to use your delicious ingredients while filling your home with a delightful aroma!
Ingredients
- 1 cup red lentils, rinsed
- 2 medium carrots, diced
- 2 medium parsnips, diced
- 2 stalks celery, chopped
- 1 onion, diced
- 1 bell pepper, diced (any color you prefer)
- 4 ripe tomatoes, chopped
- 4 cups vegetable broth or water
- 2 cups fresh spinach, chopped
- 2-3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs for garnish (like parsley or basil, optional)
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent.
- Add the carrots, parsnips, celery, and bell pepper to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Stir in the chopped tomatoes, red lentils, thyme, oregano, salt, and pepper. Mix well to combine.
- Pour in the vegetable broth or water, bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 25-30 minutes, or until the lentils and vegetables are tender.
- Towards the end of cooking, stir in the chopped spinach and allow it to wilt for about 2-3 minutes.
- Taste and adjust seasoning if needed. If you'd like a creamier soup, you can blend a part of it with an immersion blender.
- Serve hot, garnished with fresh herbs if desired.
