Hearty Herby Lentil Vegetable Soup

Ingredients
- 1 cup frozen onions
- 1 cup frozen peas
- 1 cup frozen carrots
- 1 cup frozen cauliflower
- 1 cup frozen broccoli
- 1 cup frozen mixed peppers
- 1 cup frozen sprouts
- 1 cup frozen spinach
- 1 cup frozen sweet potato chunks
- 1 cup frozen sweetcorn
- 1 can tinned tomatoes (400g)
- 1 cup red lentils
- 2 tablespoons tomato puree
- 2 teaspoons lazy garlic (or to taste)
- 1 tablespoon mixed herbs (like thyme, oregano, basil)
- 1 teaspoon chili flakes (or to taste, if you want it spicier)
- Salt and black pepper to taste
- 4 cups vegetable broth or water
- Ricotta cheese for serving
Cooking Instructions
- In a large pot, add the frozen onions and lazy garlic. Sauté over medium heat for 3-5 minutes until fragrant.
- Add the frozen carrots, peas, cauliflower, broccoli, mixed peppers, sprouts, sweet potato chunks, sweetcorn, and spinach to the pot. Stir for another 5-7 minutes.
- Pour in the tinned tomatoes, tomato puree, and vegetable broth. Stir to combine.
- Add red lentils, mixed herbs, chili flakes, salt, and black pepper. Bring the soup to a boil.
- Reduce the heat and let the soup simmer for about 20-25 minutes, or until the lentils and vegetables are tender.
- Use an immersion blender to puree the soup until it reaches a smooth consistency. If you don't have one, carefully blend the soup in batches in a traditional blender.
- Taste and adjust seasoning as needed.
- Serve hot, with a dollop of ricotta cheese on top for that creamy finish.
