- 2 pounds lamb stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups butternut squash, cubed
- 4 cups beef or vegetable broth
- 1 cup red wine (optional)
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add lamb chunks and brown them on all sides. Remove the meat and set aside.
- In the same pot, add onions and garlic. Sauté until onions are translucent.
- Add carrots, potatoes, and butternut squash, stirring to combine with the onions.
- Return the browned lamb to the pot. Stir in the tomato paste, thyme, rosemary, bay leaf, and season with salt and pepper.
- Pour in the broth and red wine (if using). Bring to a boil.
- Reduce heat, cover, and let it simmer for about 1.5 to 2 hours, or until lamb is tender and flavors are melded together.
- Adjust seasoning if needed. Remove the bay leaf before serving.
- Garnish with chopped parsley and enjoy!
