Ingredients
For the Focaccia:
- ½ cup warm water (110-115°F)
- 2 teaspoons sugar
- 2 teaspoons active dry yeast
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup lukewarm water
- 1/4 cup olive oil
For the Toppings:
- 2 tablespoons olive oil
- 2 onions, sliced
- salt and pepper to taste
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- flaky sea salt, for topping
Instructions
For the Focaccia:

In a small bowl mix ½ cup of warm water, sugar and yeast and let it sit for 5 minutes, until it becomes frothy.

In a large mixing bowl, whisk together flour and salt. Then add the yeast mixture, lukewarm water and olive oil. Knead with a dough hook for 8-10 minutes, until the dough is smooth and elastic.

Grease a large bowl with some olive oil and put the dough inside, turning to coat. Cover with a damp towel and let it rise in a warm and draft-free place for 1 hour, until doubled in size.

Preheat the oven to 400°F (200°C). Grease a 9×13 inch baking dish with some olive oil.

Punch down the risen dough and press it evenly into the prepared baking dish.
For the Toppings:

In a pan, heat 2 tablespoons of olive oil over medium heat. Add sliced onions, salt and pepper, and stir. Cook for 5 minutes, until onions are wilted.

Add rosemary and thyme and cook for another 5-7 minutes, until onions are caramelized. Let the onions cool down for 5 minutes.

Spread the caramelized onion mixture evenly over the dough, pressing down on the onions slightly. Sprinkle some flaky sea salt over the top.

Bake the focaccia for 20-25 minutes or until the dough is golden brown.
