Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 teaspoons garlic powder (or 2-3 fresh garlic cloves, minced)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
- 1 cup of mixed vegetables (broccoli, zucchini, bell peppers, carrots, etc.)
- 1 tablespoon olive oil (optional, for drizzling over vegetables)
- 1 tablespoon lemon juice
- Lemon wedges for serving
Instructions
-
Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, thyme, and rosemary. If using fresh garlic, rub the minced garlic directly onto the chicken.
-
Add Water to Cooker: Pour the appropriate amount of water into the rice cooker according to its instructions.
-
Layer the Ingredients: Place the seasoned chicken breasts in the bottom of the steamer basket. Arrange the mixed vegetables on top. Drizzle olive oil and lemon juice over the vegetables if desired.
-
Cook: Close the lid and set the rice cooker to the 'steam' function. Steam for about 20-25 minutes or until the chicken reaches the internal temperature of 165°F (75°C) and is fully cooked.
-
Serve: Carefully remove the chicken and vegetables from the steamer. Let the chicken rest for a few minutes before slicing. Serve with lemon wedges for a burst of freshness!
Flavor Profile
This version has a more fragrant and savory flavor profile thanks to the garlic and herbs. The combination of thyme and rosemary pairs beautifully with the chicken and vegetables, creating a comforting and aromatic dish.
Low Inflammation Diet Friendliness
This dish remains low in inflammation with lean protein and a variety of colorful vegetables. The addition of herbs not only enhances the flavor but also brings health benefits as many herbs have anti-inflammatory properties.
