Ingredients
- 2 cups frozen petit pois (small green peas)
- 1 cup coconut cream
- 1 medium shallot, finely chopped

- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- Zest of 1 lemon
- Juice of 1 lemon
- Salt & pepper, to taste
- Optional: a pinch of ground ginger for a hint of warmth
Cooking Instructions
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute, stirring often to prevent browning.
- Add the frozen petit pois to the pan along with a splash of water. Cook for 5-7 minutes or until the peas are tender.
- Remove the pan from the heat and transfer the pea mixture to a blender. Add the coconut cream, fresh herbs (mint, basil, parsley), lemon zest, lemon juice, salt, pepper, and optional ginger.
- Blend until smooth and creamy. If the mixture is too thick, you can add a little more coconut cream or water to reach your desired consistency.
