Ingredients:
- 3 large leeks, white and light green parts only, sliced into rounds
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 4 tablespoons butter
- 5 cups chicken or vegetable broth
- 4 medium-sized potatoes, peeled and chopped
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
Instructions:
- In a soup pot, melt the butter over medium heat.
- Add the leeks, onion, and garlic, and toss to coat with the butter.
- Cook over medium heat until the vegetables are soft and fragrant, about 10 minutes.
- Add the broth, potatoes, bay leaves, thyme, salt, and pepper to the pot.
- Bring to a simmer and cook until the potatoes are fork-tender, about 20-25 minutes.
- Remove the soup from heat and let it cool for a few minutes.
- Use an immersion blender or transfer the soup to a blender in batches, and blend until creamy and smooth.
- Return the soup to the pot over low heat and stir in the heavy cream.
- Cook for another 5-10 minutes until heated through.
- Serve hot, garnished with chopped fresh herbs or croutons, if you like.
