- 1 lb beef (sirloin or flank steak), cut into 1-inch cubes
- 1 lb beef heart, cleaned and cut into 1-inch cubes
- 2 ripe peaches, pitted and cut into wedges
- 2 tablespoons honey (substitutable with a lower glycemic sweetener if preferred)
- 2 tablespoons olive oil or grass-fed butter (optional)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme) for seasoning
Instructions:
-
Prepare the Marinade: In a bowl, combine olive oil (or butter), minced garlic, salt, pepper, and fresh herbs. Add the beef and heart cubes, tossing to coat. Let marinate for at least 30 minutes at room temperature.
-
Preheat the Grill: Get your grill hot and ready for skewering. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
-
Skewer the Meat and Peaches: Alternate threading the beef, beef heart, and peach wedges onto the skewers.
-
Grill the Skewers: Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness.
-
Glaze with Honey: In the last couple of minutes of grilling, brush the peaches with honey to caramelize them slightly.
-
Serve: Remove skewers from the grill and let rest for a few minutes. Serve warm with any remaining peach wedges drizzled with honey.
