Italian Vegetable Risotto

Instructions

6. Begin adding the warmed vegetable broth, one ladle at a time. Stir continuously and wait until the liquid is mostly absorbed before adding the next ladle.
7. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
8. About five minutes before the risotto is finished cooking, add in the peas, dried oregano, thyme, salt, and black pepper to taste.
9. If using, stir in the grated parmesan cheese until melted and creamy.
10. Serve warm, garnished with fresh parsley.
