Italian Vegetable Risotto

Ingredients
- 1 cup Arborio rice (gluten-free)
- 4 cups vegetable broth (low-sodium, warmed)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper (any color), diced
- 1 cup mushrooms, sliced
- 1 cup peas (fresh or frozen)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup grated parmesan cheese (optional, for extra creaminess)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and bell pepper. Cook for another 3-4 minutes until slightly softened.
- Stir in the sliced mushrooms and cook for 2-3 minutes.
- Add the Arborio rice to the pan and stir for about 2 minutes, allowing it to toast slightly.
- Begin adding the warmed vegetable broth, one ladle at a time. Stir continuously and wait until the liquid is mostly absorbed before adding the next ladle.
- Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- About five minutes before the risotto is finished cooking, add in the peas, dried oregano, thyme, salt, and black pepper to taste.
- If using, stir in the grated parmesan cheese until melted and creamy.
- Serve warm, garnished with fresh parsley.
