This stir-fry is a delightful combination of tender chicken, vibrant tomatoes, and crunchy lettuce. It's a quick dish perfect for a weeknight dinner, highlighting the freshness of the ingredients while keeping it low-fat!
Ingredients:
- 300g chicken breast, thinly sliced
- 2 medium tomatoes, cut into wedges
- 1 cup lettuce, shredded (such as romaine or iceberg)
- 2 tablespoons soy sauce (low-sodium, if preferred)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper, to taste
- Chopped green onions or sesame seeds for garnish (optional)
Cooking Instructions:
- In a mixing bowl, combine the sliced chicken with soy sauce, rice vinegar, minced garlic, ginger, salt, and pepper. Let it marinate for about 10 minutes.
- Heat a non-stick skillet or wok over medium-high heat. Add sesame oil.
- Once the oil is hot, add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes until the chicken is cooked through and slightly golden.
- Add the tomato wedges and continue to stir-fry for another 2-3 minutes, until the tomatoes are just softened but still hold their shape.
- Remove the skillet from heat. Serve the chicken and tomatoes over a bed of shredded lettuce.
