Kawaii Potato Curry Buns Kare Pan

These fluffy and adorable potato curry buns are not only delicious but also make for an adorable presentation. Shaped like bears or capybaras, they are perfect for a fun meal or snack!
Ingredients
For the Dough:
- 3 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon active dry yeast
- 1 cup warm water (110°F/45°C)
- 1 teaspoon salt
- 1 egg (for egg wash)
- 2 tablespoons oil (vegetable or olive)
For the Filling:
- 2 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- 1 cup vegetable broth
- 2 tablespoons curry powder (adjust for milder flavor)
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Oil for cooking

Prepare the Dough:
- In a mixer bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- Add flour, salt, and oil. Mix until a dough forms, then knead for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot for about 1 hour or until doubled in size.

Make the Filling:
- In a pot, heat oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes, vegetable broth, curry powder, and soy sauce. Cook until the potatoes are tender and the mixture thickens. Mash slightly for a chunky filling. Season with salt and pepper. Let it cool.

Shape the Buns:
- Once the dough has risen, punch it down and divide it into equal pieces (about 12).
- Flatten each piece into a circle and place a spoonful of the potato curry filling in the middle.
- Pinch and seal the edges, then shape the bun into bear or capybara forms, creating ears and facial features as desired.

Second Rise:
- Place the shaped buns on a baking sheet lined with parchment paper. Cover with a towel and let them rise again for about 30 minutes.

Bake:
- Preheat the oven to 350°F (175°C).
- Brush the tops of the buns with the beaten egg for a golden finish.
- Bake for 15-20 minutes or until golden brown.
