This flavorful apple pulp sauce combines sweetness, tanginess, umami, aromatic spices, and a delightful warmth from mace, creating a unique blend that's perfect for any keto pantry.
Ingredients:
- 2 cups apple pulp (strained)
- 1/4 cup apple cider vinegar (for bold tartness)
- 1 teaspoon cinnamon (adjust to your taste)
- 1/4 teaspoon nutmeg (optional for warmth)
- 1/4 teaspoon ground clove (for aromatic depth)
- 1/4 teaspoon black pepper (for a hint of heat)
- 1/4 teaspoon chili powder (or to taste for spice)
- 1 tablespoon mushroom powder (for umami richness)
- 1/4 teaspoon ground mace (for aromatic warmth)
- 2 tablespoons erythritol or your preferred keto sweetener (adjust based on sweetness desired)
- 1/2 cup unsweetened applesauce (to help with texture if needed)
Instructions:
- Prepare your canning jars by washing them in hot, soapy water and rinsing thoroughly. Place them in a hot water bath to sterilize.
- In a medium saucepan, combine the apple pulp, apple cider vinegar, and sweetener.
- Add cinnamon, nutmeg, clove, black pepper, chili powder, mushroom powder, and ground mace, mixing well to combine.
- If the pulp seems too thick, stir in the unsweetened applesauce to achieve your desired consistency.
- Cook over medium heat, bringing the mixture to a gentle boil for about 5-10 minutes, allowing flavors to meld and develop.
- Remove from heat and fill the sterilized jars with the hot apple pulp sauce, leaving about 1/2 inch of headspace at the top.
- Wipe the rim of the jars with a clean cloth to ensure no residue is left that could impact sealing.
- Place the sterilized lids on the jars and screw on the metal bands until they are fingertip-tight.
- Process the jars in a canner or a large pot (with a rack) of boiling water for 10-15 minutes to ensure they seal properly.
- After processing, carefully remove the jars and let them cool on a clean towel or cooling rack.
- Once cool, ensure that the lids have sealed by pressing down in the center of each lid. If it pops back, it hasn’t sealed properly.
Flavor Profile: This Keto Apple Pulp Sauce now features an enticing blend of sweet, tangy, spicy, and savory elements. The addition of mace provides a subtle, aromatic sweetness that beautifully complements the other spices, enriching the overall flavor experience.
Keto-Friendly Explanation: By incorporating apple pulp and a diverse array of spices, this recipe remains low in carbohydrates while maximizing taste. The canning method makes the sauce shelf-stable, aligning perfectly with your keto principles.
