Beef stew is a timeless dish that warms the soul and provides essential nutrients. This keto-friendly version is rich in healthy fats and low in carbs, making it a perfect comfort food for your ketogenic diet.
Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes (or stew meat)
- 4 cups beef bone broth (ensures depth of flavor and nutrition)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups radishes, quartered (a great substitute for potatoes)
- 2 cups carrots, sliced (use sparingly for lower carbs)
- 2 celery stalks, chopped
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil (or avocado oil)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then add to the pot in batches, browning all sides. Remove and set aside.
- In the same pot, add the chopped onions and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the beef back to the pot along with radishes, carrots, celery, tomato paste, thyme, rosemary, and bay leaves. Pour in the beef bone broth, scraping the bottom of the pot to deglaze and incorporate all the flavors.
- Bring the stew to a simmer, then reduce heat to low. Cover and let it cook for 1.5 to 2 hours or until the beef is tender, stirring occasionally.
- Remove the bay leaves and season with additional salt and pepper as needed before serving.
Flavor Profile: This beef stew is savory and aromatic, thanks to the garlic, herbs, and the richness of the bone broth. The radishes provide a satisfying crunch, reminiscent of traditional potatoes, while letting the beef flavors shine through.
Keto-Friendly Explanation: This beef stew recipe is low in carbohydrates, making it an excellent option for anyone following a ketogenic diet. Substituting radishes for potatoes reduces the carb content while providing texture and volume. The beef and bone broth contribute healthy fats and protein, making it both nutritious and filling.
