Kole Sweet Czech Pastries

Koláče are traditional Czech pastries that are bursting with flavor! These little treats can be filled with your choice of sweet fruit jam or a sweet cheese filling, making them perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup milk
- 1/4 cup sugar
- 2 teaspoons active dry yeast
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 teaspoon salt
- 1/2 cup fruit jam (plum, cherry, or your favorite)
- Optional: 1/2 cup sweet cottage cheese
Instructions
- In a small saucepan, gently warm the milk until it's lukewarm. Stir in the yeast and a tablespoon of sugar, and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the flour, remaining sugar, and salt. Create a well in the center and add the yeast mixture, melted butter, and egg.
- Mix until a dough forms. If it's too sticky, add a bit more flour until it is manageable.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl and cover with a cloth. Let it rise in a warm place for about 1 hour, or until doubled in size.
- Preheat your oven to 350°F (175°C).
- Once risen, punch down the dough and roll it out on a floured surface to about 1/4 inch thick. Cut into circles (about 3 inches in diameter).
- Place the circles on a baking sheet lined with parchment paper. Make a small indentation in the center of each circle using your thumb.
- Fill the indents with a spoonful of fruit jam or sweet cottage cheese if you choose that option.
- Allow the pastries to rise for another 20 minutes, then bake for 15-20 minutes until golden brown.
- Let them cool slightly before enjoying.
