- 8 oz pasta of your choice (spaghetti, linguine, or penne work well)
- 1 can (5 oz) tuna, drained
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach, roughly chopped
- Zest and juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- ¼ cup grated Parmesan cheese (plus extra for serving)
- Optional: Fresh parsley or basil for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
