Lemony Garlic Chicken Thighs

Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 lemon, zest and juice
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions:
- In a bowl, mix together lemon zest, lemon juice, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper.
- Place the chicken thighs in the crockpot and pour the lemon-garlic mixture over them. Make sure the chicken is coated evenly.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 4-5 hours or until the chicken is cooked through and tender.
- Once cooked, remove the chicken thighs from the crockpot and place them on a serving dish.
- If desired, you can thicken the sauce by transferring it to a saucepan on the stovetop and simmering until it reaches your desired consistency.
- Pour the sauce over the chicken thighs, garnish with chopped fresh parsley, and serve hot.
