Mango Coconut Shrimp Egg Rolls

These egg rolls are a delightful fusion of flavors, combining the sweetness of mango with succulent shrimp and a hint of coconut. Perfect for a fun appetizer or a light main dish!
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 ripe mango, diced
- 1/2 cup shredded coconut (sweetened or unsweetened, depending on preference)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon lime juice
- Salt and pepper, to taste
- 10 egg roll wrappers
- Oil for frying
- Sweet chili sauce for dipping (optional)
Instructions
- In a bowl, combine the shrimp, diced mango, shredded coconut, green onions, garlic, ginger, lime juice, salt, and pepper. Mix until well combined.
- Place an egg roll wrapper on a clean surface, with one corner facing you.
- Spoon 2-3 tablespoons of the shrimp and mango mixture onto the center of the wrapper.
- Fold the bottom corner up over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve hot with sweet chili sauce for dipping.
