Starters
1. Mini Bobotie Stuffed Peppers Ingredients:
- 100 mini bell peppers (cut in half and seeds removed)
- 10 kg ground beef or lamb
- 5 large onions (finely chopped)
- 10 cloves garlic (minced)
- 0.5 kg dried apricots (chopped)
- 15 slices of white bread (soaked in milk and crumbled)
- 10 large eggs
- 5 tsp curry powder
- Salt and pepper to taste
- Fresh coriander for garnish
Cooking Instructions:
- Preheat your oven to 180°C (350°F).
- In a large pan, sauté onions and garlic until translucent.
- Add ground meat, cooking until browned. Mix in curry powder, salt, pepper, and apricots.
- In a bowl, combine the meat mixture with crumbled bread and beaten eggs.
- Stuff the mini peppers with the bobotie mixture and place on a baking sheet.
- Bake for 20-25 minutes until the peppers are tender.
2. Masadenya (African Potato Salad) Bites with Spicy Ketchup Ingredients:
- 10 kg baby potatoes (boiled and halved)
- 5 kg mayonnaise
- 2 kg finely chopped onions
- 1 kg diced bell peppers
- 2 kg sweet corn
- 5 cups fresh chopped parsley
- Salt and pepper to taste
- 3 liters spicy ketchup
Cooking Instructions:
- In a large mixing bowl, combine boiled and halved baby potatoes, onions, bell peppers, sweet corn, and parsley.
- Stir in mayonnaise and season with salt and pepper.
