Microwave Vanilla Butter Cookies Without Flour

These delightful microwave cookies are quick to make with pantry staples and turn out sweet, buttery, and utterly delicious!
Ingredients
- 4 tablespoons unsalted butter
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup quick oats (if you don’t have oats, we can adjust further!)
- A pinch of salt
Cooking Instructions
- In a microwave-safe bowl, melt the unsalted butter in the microwave for about 20-30 seconds.
- Once melted, stir in the granulated sugar, vanilla extract, and a pinch of salt until combined.
- Add the oats to the mixture and mix well until everything is properly combined.
- Scoop tablespoon-sized portions of the mixture and form little balls.
- Place the cookie balls on a microwave-safe plate, flattening them slightly with your hand.
- Microwave the cookies for about 30-45 seconds. Keep a close eye on them, as microwaves can vary in power!
- Let them cool for a few minutes before enjoying!
