Mild ChineseStyle Skirt Steak Stir Fry Serves 3

Ingredients:
- 1.5 pounds skirt steak, thinly sliced against the grain
- 3 tablespoons vegetable oil
- 6 cloves garlic, minced
- 1.5 tablespoons fresh ginger, grated
- 1.5 cups bok choy, sliced
- 1.5 cups celery, sliced
- 3 tablespoons soy sauce
- 1.5 tablespoons oyster sauce (optional)
- Salt and pepper, to taste
Instructions:
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat.
- Add the skirt steak to the hot skillet and cook for 2-3 minutes until browned. Remove the steak from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil, minced garlic, and grated ginger. Stir-fry for about 30 seconds until fragrant.
- Add the bok choy and celery to the skillet and cook for 2-3 minutes until they start to soften.
- Return the cooked skirt steak to the skillet and stir-fry for an additional 1-2 minutes to combine all the flavors.
- In a small bowl, mix together soy sauce and oyster sauce (if using), then pour the sauce over the stir fry mixture in the skillet. Season with salt and pepper to taste.
- Continue stir-frying for another 1-2 minutes until the sauce is well combined and the vegetables are tender-crisp.
- Remove from heat and serve the stir fry over steamed rice or noodles.
