Mini Chocolate Lava Cakes

These little treasures are perfect for impressing your friends with their warm, melting chocolate centers. Plus, since they’re mini, you can have just one… or two!
Ingredients
- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- Pinch of salt
- Cooking spray (for greasing the muffin tin)
Instructions
- Preheat your oven to 425°F (220°C).
- Grease a mini muffin tray with cooking spray to ensure easy removal.
- In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second intervals, stirring after each until smooth.
- Stir in the powdered sugar until well combined.
- Add in the eggs, egg yolks, and vanilla extract, mixing until fully incorporated.
- Gently fold in the flour and salt until just combined.
- Pour the batter into the greased mini muffin tin, filling each cavity about 3/4 full.
- Bake for 10-12 minutes, until the edges are firm but the center is still soft.
- Let them cool for 1-2 minutes, then carefully remove from the muffin tray and serve immediately.
