Moroccan Spiced Roast Lamb Leg

Ingredients:
- 1 leg of lamb (approximately 4-5 pounds)
- 2 tablespoons olive oil
- 3 cloves of garlic, minced
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 1 tablespoon ground paprika
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup lemon juice
- 1/4 cup honey
- Fresh cilantro leaves, for garnish (optional)
Instructions:
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ginger, turmeric, salt, and black pepper to create a spice rub.
- Pat the lamb leg dry with paper towels and place it in a roasting pan.
- Rub the spice mixture all over the lamb leg, making sure to coat it evenly.
- In a separate bowl, whisk together the lemon juice and honey until well combined.
- Pour the lemon juice and honey mixture over the lamb leg, allowing it to marinate for at least 30 minutes.
- Place the roasting pan in the preheated oven and roast the lamb leg for about 2 1/2 to 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare, or 145°F (63°C) for medium.
- Baste the lamb leg with the pan juices every 30 minutes.
- Once cooked to your desired level of doneness, remove the lamb leg from the oven and let it rest for 15 minutes before carving.
- Carve the lamb leg into thin slices and serve it garnished with fresh cilantro leaves, if desired.
