Ingredients
- 4 chicken drumsticks
- 2 cups broccoli slaw
- 2 large carrots, julienned or sliced thinly
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (or hoisin if you prefer)
- 1 teaspoon sesame oil (plus more for drizzling)
- 1 tablespoon vegetable oil (or any neutral oil)
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Sesame seeds (optional for garnish)
Instructions
- Prep the Chicken: Season the chicken drumsticks with salt, pepper, and a sprinkle of garlic.
- Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium heat. Add the drumsticks and cook for about 20–25 minutes, turning occasionally until they are golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Sauté Aromatics: Remove the drumsticks and set them aside. In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
- Add Carrots: Toss in the sliced carrots and stir-fry for about 3–4 minutes until they start to soften.
- Add Broccoli Slaw: Stir in the broccoli slaw and cook for another 2–3 minutes, mixing well.
- Combine & Season: Return the chicken drumsticks to the skillet. Pour in the soy sauce, oyster sauce, and sesame oil, stirring everything together. Cook for an additional 2 minutes to coat all the ingredients evenly.
- Serve: Plate the stir-fry and drizzle with extra sesame oil if you like. Garnish with chopped green onions and sesame seeds if using.
