Fudgy Chewy Protein Cookies with Beet Powder & Coconut Flour
Ingredients
- 1 ripe avocado, mashed
- 1/2 cup cottage cheese (low-carb brand)
- 2 large eggs
- 1/4 cup erythritol or your preferred keto-friendly sweetener (adjust based on sweetness)
- 1/4 cup unsweetened cocoa powder
- 1/2 cup hemp protein powder
- 2 tablespoons coconut flour (instead of 1/4 cup almond flour)
- 1-2 tablespoons super greens powder (optional)
- 1-2 tablespoons beet powder (adjust for desired color and flavor)
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Optional: 1/4 cup sugar-free dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mashed avocado, cottage cheese, eggs, erythritol, and vanilla extract. Mix until smooth and creamy.
- In another bowl, whisk together the cocoa powder, hemp protein powder, coconut flour, super greens powder (if using), beet powder, baking powder, and salt.
- Gradually add the dry mixture to the avocado mixture, stirring until fully combined. Gently fold in any chocolate chips, if using.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 1-2 inches apart.
- Bake for 10-12 minutes or until the edges are set. The centers may look slightly underbaked for that perfect fudgy texture.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
