OnePan Chicken and Vegetable Bake with Potatoes and Peppers

Ingredients
- 2 boneless, skinless chicken breasts
- 3 medium potatoes, diced
- 2 bell peppers (any color), sliced
- 1 medium onion, sliced (optional)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine diced potatoes, sliced bell peppers, and onion (if using). Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and pepper. Toss until well coated.

- Cover the dish with foil and bake for 30 minutes.
