Ingredients
- 2 chicken breasts, thinly sliced
- 8 oz egg noodles (or your choice of noodles)
- 2 tablespoons vegetable oil
- 2 cups mixed vegetables (such as bell peppers, broccoli, and snap peas)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Fresh cilantro or basil leaves (for garnish)
Cooking Instructions
- Cook the noodles according to package instructions, drain, and set aside.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the sliced chicken to the pan, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry for about 3-4 minutes until they're tender but still crisp.
- Return the chicken to the pan, add the cooked noodles, soy sauce, oyster sauce (if using), sesame oil, and rice vinegar. Toss everything together to combine well and heated through.
- Garnish with sliced green onions and fresh herbs before serving.
