This quick and easy dish combines the heartiness of ground turkey with the vibrant flavors of spinach, all cooked together with pasta for a delightful one-pan meal that's perfect for a busy day!
Ingredients:
- 1 pound ground turkey
- 8 ounces pasta (your choice, like penne or fusilli)
- 2 cups fresh spinach, roughly chopped
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes (with juices)
- 2 cups chicken broth (or vegetable broth)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for a little heat)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Grated Parmesan cheese (for serving)
- Fresh basil leaves (for garnish, optional)
Instructions:
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the ground turkey to the skillet. Season with salt, pepper, oregano, basil, and red pepper flakes (if using). Cook until the turkey is browned and cooked through, about 5-7 minutes.
- Stir in the diced tomatoes with their juices, chicken broth, and pasta. Bring to a simmer.
- Cover the skillet and cook for about 10-12 minutes, or until the pasta is tender and cooked through. Stir occasionally to prevent sticking.
- Once the pasta is cooked, add the spinach and mix well. Cook for an additional 2-3 minutes until the spinach is wilted.
- Taste and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
Flavor Profile: This dish has a wonderful balance of savory and slightly sweet from the tomatoes, with fragrant herbs like oregano and basil.
