- 250g minced beef
- 1 can (400g) tinned chopped tomatoes
- 1 can (400g) tinned red kidney beans, drained and rinsed
- 1 teaspoon olive oil
- 1 small onion, finely chopped (if available)
- 2 cloves garlic, minced (if available)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 250g microwavable brown rice (for serving)
- Optional: Fresh herbs (like cilantro or parsley) for garnish
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. If you have onion and garlic, add them and sauté until softened and fragrant, about 5 minutes.
- Add the minced beef to the pot, breaking it apart with a spatula. Cook until browned.
- Stir in the tinned chopped tomatoes, red kidney beans, oregano, basil, cumin, smoked paprika, salt, and pepper. Mix well.
- Bring the mixture to a gentle simmer. Allow it to cook uncovered for about 20-25 minutes, stirring occasionally until it thickens to your desired consistency. If it gets too thick, feel free to add a splash of water.
- While the chili cooks, prepare the microwavable brown rice according to the package instructions.
