Ingredients:
- 3 lbs beef, bone-in
- 2 lbs potatoes, peeled and cut into chunks
- 1 lb parsnips, peeled and cut into chunks
- 1 lb carrots, peeled and cut into chunks
- 4 medium onions, roughly chopped
- 4 garlic cloves, minced
- 1/4 cup vegetable oil
- 4 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 1 tablespoon dried thyme
- 1 tablespoon smoked paprika
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 400°F.
- In a large roasting pan, arrange the beef in the center.
- Add the vegetables around the meat, making sure everything is in a single layer.
- In a small bowl, stir together the vegetable oil, garlic, and smoked paprika.
- Brush the mixture all over the beef and vegetables, making sure everything is coated well.
- Season everything with salt, black pepper, thyme, and bay leaves.
- Pour the beef broth and red wine over the meat and vegetables.
- Cover the pan tightly with foil, and roast in the preheated oven for 2-2.5 hours.
- Check the meat and vegetables after 2 hours for doneness, and continue roasting if needed.
- Once done, remove the foil and let the meat rest for 10-15 minutes before carving.
- Serve hot, with the vegetables and sauce.
