PanFried Crispy Pasta

Ingredients
- 8 ounces of your favorite pasta (gluten-free if necessary)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup mixed vegetables (such as bell peppers, zucchini, and broccoli), thinly sliced
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Optional toppings: freshly grated Parmesan cheese (lactose-free if needed), chopped fresh herbs (such as parsley or basil)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet or frying pan over medium heat.
- Add the chopped onion and minced garlic to the pan and sauté until translucent and fragrant.
- Increase the heat to medium-high and add the mixed vegetables to the pan. Cook until they are tender-crisp, about 4-5 minutes.
- Add the cooked pasta to the pan with the vegetables. Season with salt, pepper, dried oregano, and dried basil. Toss everything together to combine.
- Press down on the pasta mixture with a spatula to create a flat, even layer in the pan.
- Let the pasta cook undisturbed for about 5-7 minutes, or until the bottom is crispy and golden brown. Flip the pasta over in sections, using a spatula, to allow the other side to crisp up as well.
- Once the pasta is evenly crispy on both sides, remove from heat.
