Pav Bhaji is a popular Indian street food, originating from the state of Maharashtra. It's a delicious mixed vegetable curry that is served with a soft bread roll called Pav. It's perfect for a quick and easy meal or as a party appetizer.
Ingredients
For the Pav Bhaji:
- 3 medium Potatoes, peeled and chopped
- 1 cup Cauliflower florets
- 1 cup Green Peas
- 1/2 cup chopped Carrots
- 1/2 cup chopped Bell peppers
- 1/2 cup chopped onions
- 1/2 cup chopped Tomatoes
- 1 tablespoon Ginger-Garlic paste
- 2 tablespoons Pav Bhaji Masala (you can buy this at any Indian grocery store)
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili powder
- 2 tablespoons Butter
- Salt, to taste
- Coriander, chopped for garnishing
For the Pav:
- 8 Soft bread rolls (Pav)
- 3 tablespoons Butter
Instructions
For the Pav Bhaji:
- Boil all the vegetables together in a pot of water until soft.
- Strain the vegetables and mash them coarsely using a potato masher or a fork.
- In a different pan, heat the butter and sauté onions until translucent.
- Add ginger-garlic paste and cook for a few minutes until the raw smell goes away.
- Add the chopped tomatoes and cook until they are soft.
- Now add the pav bhaji masala, turmeric powder, and red chili powder. Stir it well and cook for 2-3 minutes.
- Add the mashed vegetables and salt to the pan.
- Mix everything well and let it cook on a low flame for 5-10 minutes.
- If the mixture is too thick, you can add a little water to reach your desired consistency.
- Garnish with coriander leaves.
For the Pav:
- Cut the bread rolls in half.
- Heat a pan and add 1 tablespoon of butter.
- Place each half of the bread roll, cut side down, on the pan and toast until crispy.
- Repeat with the remaining bread rolls.
Serve the Pav Bhaji hot with a dollop of butter on top and the toasted bread rolls on the side. Enjoy!
