Here’s a delightful Penne al Pomodoro recipe, perfect for serving about 10 small samples.
Ingredients
- 2 lbs (900 g) penne pasta
- 1/3 cup (80 ml) olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 cans (14 oz each or 400 g) crushed tomatoes
- Salt and freshly ground black pepper, to taste
- 2 tsp sugar (to balance acidity)
- 2/3 cup fresh basil leaves, chopped
- Grated Parmesan cheese, for serving
- Red pepper flakes (optional, for a touch of heat)
Cooking Instructions
-
Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.
-
Sauté Aromatics: In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 10 minutes. Add the minced garlic and cook for another minute until fragrant.
-
Prepare the Sauce: Pour in the crushed tomatoes, season with salt, pepper, and sugar. Stir well to combine and let it simmer for about 20 minutes, allowing the flavors to meld together.
-
Combine: Add the cooked penne to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.
-
Finish: Stir in the chopped basil leaves and cook for an additional minute. Taste and adjust seasoning if needed.
-
Serve: Serve hot in small sample cups or on small plates, topped with grated Parmesan cheese and a sprinkle of red pepper flakes for those who enjoy a bit of spice!
