Rest & slice — transfer steaks to a cutting board, tent loosely with foil, and rest 5–10 minutes. Then slice thinly against the grain into long strips; show her how the grain direction changes tenderness.
Cook fries (in batches) — air-fry at 400°F (200°C) for 10–12 minutes, shake, then 2–6 more minutes until crisp. For oven: bake on a single layer on a parchment-lined sheet at 425°F (220°C) for 20–28 minutes, flipping once. If using honey-cinnamon glaze, do not add before cooking.
Steam broccoli — while fries or steaks cook, steam broccoli until bright green and tender-crisp, about 4–6 minutes. Shock in cold water briefly if you want color preserved, then reheat briefly before plating.
Finish honey-cinnamon fries (optional) — place hot fries in a bowl, very lightly drizzle 1–2 tsp honey per pound (warmed a few seconds if thick), sprinkle 1/4–1/2 tsp cinnamon per pound, toss gently to glaze. Finish with a small pinch of flaky salt.
Plate assembly — place a bed of baby spinach in the center of each plate. Arrange sliced steak strips over the spinach. Add a neat pile of steamed broccoli to one side and fries on the other (or fries in a small ramekin). Sprinkle chopped parsley over the steak and squeeze a lemon wedge over the broccoli or steak for brightness.
