Pocket Frog Cheesecakes

Backstory: Inspired by the charming pocket frogs, these delightful Pocket Frog Cheesecakes are sweet treats that will surely jumpstart your taste buds and capture the whimsical spirit of these little amphibians.
Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
For the Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
For the Pocket Frog Decorations:
- Green food coloring
- White chocolate melts or white chocolate chips
- Dark chocolate chips
- Candy eyes or mini chocolate chips
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar for the crust. Mix until the crumbs are evenly coated.
- Divide the crust mixture evenly among the cupcake liners, pressing it down firmly to form the crust.
- In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, and continue to beat until well incorporated.
- Add a few drops of green food coloring to the cheesecake batter and mix well to achieve a vibrant green color resembling the pocket frogs.
- Pour the cheesecake batter into the cupcake liners over the crust, filling them about 3/4 of the way.
- Bake in the preheated oven for 20-25 minutes or until the cheesecakes are set but still slightly jiggly in the center.
- Remove the cheesecakes from the oven and let them cool completely before refrigerating them for at least 2 hours or until chilled and firm.
Pocket Frog Decorations:
- Melt the white chocolate melts or white chocolate chips according to the package instructions.
- Remove a small portion of the melted white chocolate and tint it with a darker green food coloring to create the "spots" on the frogs.
- Pour the uncolored melted white chocolate onto a piece of parchment paper in small oval shapes, resembling frog bodies.
- Dip the back of a dark chocolate chip into the melted white chocolate and attach it to each oval shape for the "frog eyes."
- Using the tinted green chocolate, create small irregular spots on the frog bodies.
- Allow the chocolate decorations to set until firm.
- Once the cheesecakes are chilled, place a chocolate frog decoration on top of each cheesecake.
