Quinoa and Veggie Italian Bake with Chicken Thighs

Ingredients
- 2 chicken thighs, skinless and boneless
- 1 cup quinoa, rinsed
- 2 cups frozen mixed peppers
- 1 cup frozen spinach
- 1 can (14 oz) tinned tomatoes
- 1 cup frozen peas
- 1/2 cup ricotta cheese (aged cheese-free)
- 1 teaspoon dried Italian herbs (like oregano and basil)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: Fresh herbs for garnish
Cooking Instructions
- Cook the Quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat, cover, and simmer for about 15 minutes, or until the water is absorbed. Fluff with a fork and set aside.
- Prepare Chicken: While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken thighs with salt and pepper, and add to the skillet. Cook for about 5-6 minutes on each side, or until they are cooked through and golden brown. Remove and chop into bite-sized pieces.
- Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, chopped chicken, frozen mixed peppers, frozen spinach, frozen peas, tinned tomatoes (with juice), ricotta cheese, and dried Italian herbs. Stir everything together until well mixed. Taste and adjust seasoning if necessary.
- Bake: Preheat your oven to 375°F (190°C). Transfer the mixture to a greased baking dish and spread it evenly. Drizzle with the remaining olive oil. Bake for approximately 25-30 minutes, or until heated through and slightly golden on top.
- Serve: Allow to cool for a few minutes before serving. If you like, garnish with fresh herbs for an extra touch of flavor!
