Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Sauté the Vegetables: In a large skillet, heat a little olive oil over medium heat. Add the frozen onions, mixed peppers, and corn. Sauté until the onions are translucent and the peppers are tender, about 5-7 minutes.
- Add Spinach and Seasonings: Stir in the thawed spinach, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until the spinach is heated through.
- Prepare the Tortilla Wraps: Lay out the tortilla wraps on a flat surface. Spread about 1/4 cup of ricotta cheese in the center of each tortilla. Top with the sautéed vegetable mixture.
