Recipe Title Quinoa and Black Bean Bowl

This nutritious and filling bowl features hearty quinoa, protein-packed black beans, and lots of fresh flavors. You can customize it with your favorite toppings and sauces.
Ingredients:
- 1 cup quinoa
- 1 can (15-ounce) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 red onion, thinly sliced
- 1 lime, juiced
- Salt and pepper, to taste
- Optional toppings: fresh cilantro, shredded cheese, salsa, hot sauce, sour cream, etc.
Instructions:
- Rinse the quinoa and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-20 minutes, or until the quinoa is tender and all the water has been absorbed.
- While the quinoa is cooking, prepare the rest of the ingredients.
- When the quinoa is done, fluff it with a fork and transfer it to a large bowl.
- Add the black beans, red bell pepper, avocado, and red onion to the bowl.
- Squeeze the lime juice over the top of the bowl and sprinkle with salt and pepper to taste.
- Toss everything together until well combined.
- Add any desired toppings (such as cilantro, cheese, salsa, hot sauce, or sour cream) and serve.
