Ingredients
- 2 cups Rouge Bordeaux flour
- 1 cup all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1 cup warm water (about 110°F or 43°C)

Mix the Ingredients:
- In a large mixing bowl, combine the Rouge Bordeaux flour, all-purpose flour, instant yeast, salt, and sugar.
- In a separate bowl, mix the warm water with olive oil.

Form the Dough:
- Gradually add the liquid mixture to the flour blend and mix until a dough begins to form.

Knead the Dough:
- Transfer the dough onto a floured surface and knead for about 8-10 minutes, or until it’s smooth and elastic. If the dough feels too sticky, sprinkle in a little more all-purpose flour as needed.

First Rise:
- Shape the kneaded dough into a ball and place it in a lightly oiled bowl, turning to coat the surface.
- Cover the bowl with a damp cloth or plastic wrap and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Shape the Pizza Dough:
- Once the dough has risen, punch it down and turn it out onto a floured surface.
- Divide the dough in half to make two medium pizzas or keep it whole for one large pizza.
- Roll out the dough or stretch it by hand to your desired thickness and shape.

- Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

- Transfer the rolled-out crust to a parchment-lined pizza peel or baking sheet.
- Top with your favorite pizza sauce, cheese, and toppings.
- Bake in the preheated oven for about 10-15 minutes, or until the crust is golden and crispy.
