Sausage and Mixed Vegetable Frittata

Ingredients
- 2 large eggs
- 1/4 cup frozen peas
- 1/4 cup frozen broccoli
- 1/4 cup frozen sweet potato chunks
- 1 tbsp olive oil or butter (for cooking)
- Salt and pepper, to taste
- 1 tsp mixed herbs (oregano, thyme, basil)
- Optional: 2 tbsp ricotta cheese, for creaminess
Cooking Instructions
- In a bowl, whisk together the eggs and season with salt, pepper, and mixed herbs.
- Heat the olive oil or butter in a 20cm frying pan over medium heat.
- Add the frozen peas, broccoli, and sweet potato chunks to the pan and sauté for about 5-7 minutes until they are heated through and beginning to soften.
- Pour the whisked eggs over the vegetable mixture. If using, dollop ricotta cheese evenly across the top.
- Reduce the heat to low and cook for about 8-10 minutes, gently lifting the edges of the frittata with a spatula to allow uncooked egg to flow underneath.
- Once the edges are set but the center is still slightly wobbly, you can place the pan under the broiler for a couple of minutes to finish cooking the top, if desired.
- Remove the frittata from the heat and let it sit for a few minutes to set before slicing.
