This comforting soup is a delightful blend of tender beef, sweet carrots, and the aromatic essence of juniper berries. A perfect appetizer to warm the soul!
Ingredients
- 1/2 lb (225g) beef (chuck or brisket), cut into bite-sized cubes
- 2 cups beef broth or stock
- 1 medium carrot, peeled and sliced
- 1/2 medium onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon dried juniper berries (crushed slightly to release flavor)
- 1 tablespoon olive oil
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Cooking Instructions
- In a medium pot, heat the olive oil over medium heat. Add the diced onions and sauté until they become translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the beef cubes to the pot. Brown the meat on all sides, seasoning with salt and black pepper as you go.
- Once the beef is browned, add the beef broth, sliced carrot, crushed juniper berries, dried thyme, and bay leaf to the pot.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1 to 1.5 hours, or until the beef is tender and the flavors have melded beautifully. Stir occasionally.
- Taste and adjust the seasoning if necessary. Remove the bay leaf before serving.
- Ladle the soup into bowls and garnish with fresh parsley, if desired.
Flavor Profile Explanation
This soup retains its robust and savory flavor, still highlighted by the earthy notes of beef and the subtle pine-like aroma of juniper berries. The sweetness of the carrot balances the richness of the broth, providing a cozy start to your meal.
