Ingredients
- 1.5 lbs (680 g) boneless, skinless chicken breasts
- 12 oz (340 g) fettuccine or any pasta of your choice
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning, if using.
- In a large pan, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the pan and allow to cool slightly before slicing into strips.
- In the same pan, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Reduce the heat to low and pour in the heavy cream, stirring to combine. Let it simmer for about 3-4 minutes.
- Gradually add the grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Add the cooked pasta and sliced chicken to the sauce, tossing to coat everything evenly. Season with additional salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
