- 2 medium potatoes, peeled and diced
- 4 large eggs
- 1 cup cheese (cheddar or your favorite)

Instructions
- In a skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until tender and golden brown, about 10-12 minutes. Stir occasionally to prevent sticking.
- While the potatoes are cooking, crack the eggs into a bowl, add salt and pepper, and beat them until well combined.
- Once the potatoes are cooked, push them to one side of the skillet, and pour the beaten eggs into the empty side. Let it cook for about 2 minutes until the edges start to set.
- Sprinkle the diced tomatoes and cheese evenly over the eggs. Once the eggs are mostly cooked (about 3-4 minutes), carefully fold the omelette in half.
- Cook for an additional minute or until the cheese has melted fully and the egg is cooked through.
