- 4 boneless, skinless chicken thighs
- 1 cup jasmine rice (or any preferred rice)
- 1 ½ cups low-sodium chicken broth or water
- 3 scallions (green onions), finely chopped
- 2 tablespoons ginger, grated
- 4 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon chili paste (adjust to your spice level)
- 1 teaspoon sesame oil
- Salt and pepper, to taste

Cooking Instructions
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a bowl, mix the ginger, minced garlic, soy sauce, chili paste, sesame oil, salt, and pepper. Add the chicken thighs to this marinade, ensuring they are well coated. Let them sit for at least 15-20 minutes to absorb the flavors.
- In a steamer pot, add the rinsed rice and chicken thighs on top. Pour the chicken broth or water over the rice, ensuring it covers the rice completely.
- Cover the pot and bring it to a boil. Once boiling, reduce the heat to low and steam for about 20-25 minutes until the rice is cooked and the chicken is tender.
- Once done, fluff the rice and gently stir in half of the chopped scallions.
- Serve the chicken thighs over a bed of fluffy rice, garnished with the remaining scallions and a sprinkle of sesame seeds if desired.
