Savory Turkey and Spinach Meatballs

These turkey and spinach meatballs are juicy and flavorful, packed with protein and goodness. They make a delightful dinner served over whole grain pasta or on their own with a side of vegetables.
Ingredients
- 1 pound ground turkey (preferably lean)
- 1 cup fresh spinach, chopped
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese (optional for flavor)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional for a kick)
- 2 cups marinara sauce (for serving)
Cooking Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese (if using), onion, garlic, egg, parsley, Italian seasoning, salt, pepper, and red pepper flakes (if using). Mix until everything is well combined.
- Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a lightly greased baking sheet.
- Bake the meatballs for about 20-25 minutes, or until they are cooked through and lightly browned, reaching an internal temperature of 165°F (75°C).
- While the meatballs bake, warm the marinara sauce in a saucepan.
- Serve the meatballs warm over whole grain pasta or on their own, topped with marinara sauce.
