Ingredients:
For the Seared Codfish:
- 4 cod fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh rosemary (a few sprigs)
For the Orange-Scented Basmati Rice:
- 1 cup basmati rice
- 2 cups water
- Zest of 1 orange
- 1 tablespoon olive oil
- Salt, to taste
- Chopped fresh herbs (like parsley or cilantro, optional)
For the Hollandaise Sauce:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter (melted)
- Salt and cayenne pepper, to taste
Cooking Instructions:

Prepare the Basmati Rice:
- In a saucepan, combine water, basmati rice, orange zest, olive oil, and salt.
- Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and stir in chopped herbs if using.

Sear the Codfish:
- Pat the codfish fillets dry and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add a few sprigs of rosemary for flavor.
- Once the oil is hot, carefully add the codfish fillets to the skillet and sear for about 3-4 minutes on each side until the fish is golden brown and cooked through. Remove from the skillet and let rest for a moment.
