Shrimp and Asparagus Pasta

This delightful dish combines succulent shrimp with tender asparagus, all tossed in a light, savory sauce. It's perfect for meal prep, as it keeps well in the fridge and can be easily reheated!
Ingredients
- 8 ounces spaghetti or your favorite pasta
- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup chicken or vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
- In the same skillet, add asparagus and sauté for about 3-4 minutes, until tender but still crisp.
- Pour in the chicken or vegetable broth and bring to a simmer. Add the heavy cream and stir until well combined.
- Mix in the cooked pasta, shrimp, and reserved pasta water as needed to reach the desired consistency. Stir in the Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh parsley if desired and serve warm.
